  It is our intention to offer our guests not just Umbria with its enormous richness of countryside, art history and culture, but exactly because this is a land which stimulates and inspires, we want to help them to discover or rediscover their capacity, curiousity, and appreciation to enjoy and partake. All this through activities which, once taken up as part of a normal daily routine, can be maintained. For lovers of Italian food cooking and for who wants to fulfil a voyage through typical Umbrian flavours and not only that, we propose, in a pleasant and friendly atmosphere, cooking courses to learn to invent and realise one or more menus choosing the ingredients and the accompanying wines with care ... Courses


Pane, pizza e focacce (Bread, Pizza and Focacce)

Umbrian bread, classic pizzas (4 formaggi, margherita, napoletana), le rustiche (filled).

Pasta secca, fresca e ripiena (Pasta: dry, fresh and filled)
Dried pasta: penne all’arrabbiata, spaghetti alla carbonara, orecchiette alle cime di rape (or seasonal vegetables); fresh pasta: tagliatella al ragù, spaghetti alla chitarra in mushroom cream (or seasonal vegetables, classic lasagna; filled pasta: ravioli ricotta and spinach with butter and sage, meat tortellini with sauce.

Meat
Saltimbocca, involtini with tomatoe sauce, stuffed pork, pollo alla cacciatora.

Vegetables
LGrilled vegetables with sauce, vegetables au gratin, parmigiana with aubergine or zucchine, pulses: lentil polpette, chickpea soup with chickory, broadbeans with bacon, beans all’uccelletto, tortino italiano (potatoe, tomatoe, onion).

Desserts
Tozzetti with vin santo, tiramisù, zuppa inglese, semifreddo al croccante, fruit tart.

Italian Menu
Starter, pasta dish, meat dish, vegetables/salad, dessert.

Umbrian Menù
Starter: 'panzanella', 'torta al testo' with prosciutto, Barley salad
Pasta dish: 'umbricelli'
Meat dish: 'girello alla perugina'
Vegetables: chickory tossed in chilli
Dessert: 'ciaramicola'.


All participants are supplied with:
- kitchen staff
- ingredients
- the meal cooked
- writing pad and pen
- apron
- recipe book
- a photograph of the group
Lessons are conducted in Italian, English
All lessons are on request

Lessons: 4 hours
Course available: from Monday to Friday
Course time: from 9,30 to 13,30
Number of participants : 8 / 14 people
